Holiday Baking: Naturally Sweet and Gluten-Free |
Ricki Heller: you know her, you love her! Or you should given all the times I’ve professed my love and shared recipes inspired by my long lost cousin. (Fun fact: Ricki and I were blog/email friends long before we discovered that her cousins are besties with my husband’s aunt and uncle!)
Here we are at Nourished a couple years ago, sandwiched around the fabulous Amy Green of Simply Sugar and Gluten-Free.
Ricki is the genius behind Diet, Dessert and Dogs, a blog about delicious food that happens to be vegan, gluten-free and refined sugar-free. Oh, it’s also a blog about dogs in case that wasn’t clear! Ricki is one proud furbaby mama. She is also one smart cookie in the kitchen. I know because I’ve enjoyed (and sometimes adapted) many of her recipes, like: Baked Pumpkin Cranberry Oatmeal Pudding, Mole Tofu, and Coconut-Almond Porridge with Chia, Hemp and Flax Seeds.
One of my favorite recipes from Ricki is her Mint Chocolate Chip Cookies. Chewy and chocolate-y like a cookie should be, I’ve made these over and over again and no one can believe that they’re vegan, gluten free, and don’t contain regular sugar. The recipe was originally published in her e-book Sweet Freedom, and the entire book has been revamped and re-released as Naturally Sweet and Gluten-Free. I had the privilege to try out several of the recipes during the testing phase and I’m thrilled to have the book in hand. The gingersnap cookies have become a fast favorite, a perfect accompaniment to my pumpkin dip! (All of the recipes pictured above are ones from the new book!)
