Sunday Funday: Curried Sweet Potato-Crusted Fish with POPCHIPS & GIVEAWAY!

This may come as a shocker, given the fact that I make no secret about how much I love food, and specifically, eating food. But the fact is, I’m not much of a snacker.

That’s barely true, actually, considering I eat at least 6 times per day. At least. But I’m pretty predictable with my snacks and tend to stick the same things. (Reason #5743907534 I don’t do “daily eats” posts – you’d be bored to tears!) Another thing about my snacks is that they need to be filling and nutrient-dense. I need more than a handful of baby carrots or some stupid cereal bar that’s going to leave me biting my nails in 30 minutes waiting for the next feeding time. Certainly not a bag of chips I mean air I mean chips.

And that’s not to say I don’t like chips. I’m not that crazy. I certainly like chips, when at a party or watching a game, especially when there’s a dish of edamole or hummus nearby. At times like these it’s apparent that I actually *love* chips.

Another food I love is sweet potatoes. So when popchips offered to let me try their new Sweet Potato Chips, who was I to say no?

If you’ve never tried popchips, here are a few fun facts:

  • popchips are literally popped. Not fried, not baked, but popped up with a little heat and pressure, a process which allows its makers to stick to a few wholesome ingredients and make sure each chip is full of flavor.
  • There’s nothing too bad about about popchips. Just a handful of all-natural ingredients that won’t leave your fingertips covered in grease and won’t leave your thighs looking full of, well, grease.
  • Those bad guys like msg, hydrogenated oils, preservatives, and fake colors that make us want to steer clear of lots of other processed snacks? They’re not here. Not a trace. Popchips are all-natural.

Additionally, there are a few great things about popchips Sweet Potato chips that make them extra special.

  • Sweet potato chips obviously way harder to resist than regular potato chips. Or is that just me?
  • popchips sweet potato chips are the only variety that is gluten free!
  • popchips sweet potato chips are one of a few flavors that are vegan.

And just so you know, they taste great too. My husband, less a creature of habit than me, was happy to pack bags of sweet potato popchips to take with his lunch, but I knew I could find another way to enjoy them.

To make a quick and easy sweet-potato crusted fish, just do the following:

  1. Place a wire baking rack on top of a rimmed baking sheet, and spray with nonstick cooking spray.
  2. Crush a snack-size bag of popchips in the food processor and pour them onto a plate. Sprinkle in some curry powder and mix it up.
  3. Spoon some coconut flour onto a second plate, and beat an egg in a medium bowl.
  4. Dip each piece of fish (I used a barramundi, a firm white fish) into the coconut flour, then the egg, and finally the sweet potato chip crumbs.
  5. Place the coated fish on top of the baking rack.
  6. Bake in a 375ยฐF for about 12-15 minutes, or until fish is opaque in the center (give or take a few minutes, depending on how thick your fish is.)

      I’m actually not terribly surprised. But I guess it doesn’t bother me very much because I don’t interpret any of their promotional statements as claims that popchips are a “healthy” food (ie, have nutritional value) but rather that they are just “not as bad” as some other snack foods. I hope my readers get the message that I don’t promote making a habit of consuming processed snack foods, even ones like these. But once in a while? Not a huge deal.

    I saw the sweet potato popchips one day and grabbed them right away. I had loved the barbecue flavor, but sweet potato is definitely the best flavor of popchip! And my favorite all-natural snack is an easy one…Greek yogurt! So creamy…mixed with frozen blueberries, frozen walnuts, raw cacao nibs, and some cinnamon puffins

    what a fun way to coat fish! love this recipe Cara! I have tried popchips and love them, haven’t seen the sweet potato kind yet. I’m a chip girl, and I have a hard time eating the right sized portions of them so I save them for ‘special’ occasions ๐Ÿ™‚ My favorite natural snack though is hummus and veggies (sugar snap peas and celery are my favorite dippers).

    What a great idea! I once coated some white fish in sea salt and vinegar chips. That was so good, but I had forgotten about using chips until now.
