Asian Tuna Salad

I applaud all my blogging friends who take the time to share their eats every day. Knowing how long it takes me to put together one update with a few pictures, I can’t imagine finding the time and patience to do that every day, for every meal! And besides, my daily meal plans probably wouldn’t be very interesting. Nor would the they look very pretty, eaten out of tupperware at my desk each day. After a couple days, you’d figure out that I have a few staples for breakfast, lunch, and snacks that get in various combinations day after day. This is why I stick to sharing just my dinners with you – that’s where I change things up the most.

If you’ve ever wondered what I eat all day long (and believe me, I sometimes feel like I’m eating all day!) I’ll let you in on it. Breakfasts are either chicken sausage with scrambled egg substitute, oatmeal or cottage cheese with protein powder and other various mix-ins, or pancakes. Snacks are things like Greek yogurt, Zone bars, string cheese, and almonds. For lunches, I go for big salads, grilled chicken or tuna sandwiches in low-carb lavash wraps, or, tuna bowls, as I like to call them.

I use tuna the way some bloggers use oatmeal – as a blank canvas for mixing in all kinds of goodies. It’s cheap (I can always buy cans of solid white tuna for 99 cents, sometimes less), lean, full of protein, and lends itself to so many variations beyond the standard mayonnaise.

I can’t think of the last time I used mayo in tuna.

The latest tuna creation was Asian-inspired, something I literally threw together with whatever was left in the fridge one day. And because it happened to be a weekend, and I happened to be at home with some nice lettuce to plate it with, and because it was particularly delicious, I decided to share it with you.

Ginger, cilantro, and cashew butter gave this an awesome flavor (though peanut butter would be tasty too.) Carrots and cukes provided a nice crunch. Whether serve this up as pretty little lettuce wraps or just eat it out of a bowl at your desk (probably what I will be doing next time!) this mix will satisfy your tastebuds and keep you fueled for the afternoon ahead.

What’s your favorite way to make tuna salad?

Asian-Style Tuna Salad

1 can of tuna
1 small carrot, grated
1/4 cup diced cucumber
1 large scallion, thinly sliced
1 tablespoon chopped cilantro
1-2 teaspoon grated fresh ginger
12 gm (3/4 tablespoon) cashew butter (or all-natural peanut butter)
1 tablespoon light soy sauce
1 teaspoon chili garlic sauce

Drain the tuna and add to a bowl; break apart with a work. Add the carrots, cucumber, scallion, cilantro, and ginger. Whisk together the nut butter, soy sauce, and chili garlic sauce, and pour over the tuna. Gently mix together until combined.

    I know what you mean by those people who post everyday…How do they do it?! I'm content to produce a post once or twice a week. My family thanks me for it, they kind of like having me around! Just like you, it takes me a little work to get my posts and running. I like all the ingredients in your tuna salad, a sure winner you have (plus, didn't I tell you I love all your recipes!).     Um…my favorite way to eat tuna salad is with mayonnaise. πŸ™‚ Seriously, I love all of those mayonnaisey salads – egg, chicken, potato. I can't remember the last time I made one though. Stupid delicious things that are bad for you.I do love tuna in general though, not just mixed with mayonnaise, and I love the asian-inspired direction you've gone here.

    I love tuna salad and I hate mayo so I usually end up using yogurt instead! Love yours and the photo is really showcasing it well.

    This looks interesting…I've never had tuna like that before. Lately, I've been REALLY into tuna…especially tuna melts! While I know those aren't as healthy, they're so good!     Great post Cara! Thanks for the new ideas. I have chicken sausage in my freezer and I will thaw some out for breakfast. Also, I love this recipe and the idea of using tuna as a blank slate. Frankly, photos of everyones oatmeal breakfast every day tends to get a little old anyway.
