Mango & Avocado Salad with Peanut-Coconut Dressing

Since I got my PB2, I’ve been all about peanut sauces and dressings. So when I came across a recipe for a mango and avocado salad with a peanut dressing, I thought this would be perfect! The dressing really appealed to me – it uses coconut milk as a base and is accented with hot chili pepper and bright cilantro. The salad was already pretty nutritious since it provides lots of good, healthy fats from the peanut butter and avocado, but I decided to slash the calories a bit by using PB2 (still getting lots of good fat from the avocado!) and balance it out with some protein in the form of grilled shrimp. This was quick to put together and deliciously refreshing and satisfying on a hot summer night.

Mango-Avocado Salad with Peanut-Coconut Dressing

Dressing
2 tbsp light coconut milk
1/2 tsp coconut extract
juice of 1 lime
1/2 tbsp fish sauce
2 tbsp PB2
1 tbsp water
1/2 of a long green chili pepper, minced
1 tsp brown sugar
2 tbsp chopped fresh cilantro (or a combination of cilantro and mint)
2 tbsp red onion, minced

Remaining Ingredients
1 large ripe mango, peeled, pitted, cut into thin slices
1 avocado, halved, pitted, peeled, cut into thin slices
6oz package of arugula
1/2 oz chopped peanuts8oz shrimp, peeled and deveined
Penzeys Bangkok blend, or your choice of seasoning

Directions
Whisk together the dressing ingredients. Taste and see you how like it – you may want more chili pepper depending on the heat of what you’re using, or you may want more fresh herbs to brighten up the flavor. Toss the shrimp in the seasoning and grill over medium-low heat for 1-2 minutes per side, just until opaque.Arrange the mango and avocado slices over the arugula. Top with the grilled shrimp, drizzle with the coconut-peanut dressing, and sprinkle with chopped peanuts.

    One of my favorite restaurants has mango and avocado fresh rolls with peanut sauce. I love that combo, and this looks like a fun twist on it!

    It looks amazing and yummy. Good recipe. I am surely gonna try it. I like avocado. Avocado is very healthy and has many health benefits.
