Shrimp & Pineapple Fried “Rice”

When it comes to fried rice along with Chinese food, I can take it or leave it. Usually, I leave it. I just prefer to load up my plate with lots of meat and veggies (not that I’m claiming that’s necessarily healthier, as those things can still be full of fat, this is just honestly my preference!). I can’t really remember the last time we even ordered fried rice along with a Chinese takeout order. But lately I’ve seen a few recipes popping up on blogs for fried rice as a main dish. And even a few that involved cauliflower instead of rice – as you can imagine, that’s right up my alley. So suddenly, I was craving fried rice!

I took inspiration from a few different sources and came up with a shrimp and pineapple fried rice big on protein and low on carbs. Peas, garlic, scallions, ginger, and crushed red pepper add tons of great flavor, and there’s even an egg in there to make it really seem like the real thing. I bet you’re wondering, is it really like the real thing? Well to be honest, I don’t really know because I haven’t had fried rice in a very, very long time. But I can tell you this was really tasty. Like, really good. Says my husband, “Just letting you know, hon, I’d eat this any time (hint hint, please make it again soon!)

Shrimp & Pineapple Fried Cauli “Rice”

Ingredients
1 tbsp olive oil, divided
1lb shrimp, pealed and deveined
1/4 cup frozen peas
1 large scallion, sliced thinly
2 cloves minced garlic
pinch of crushed red pepper
2 tsp freshly grated ginger
1 cup diced pineapple (150gm)
1lb fresh cauliflower, grated
2 tbsp lite soy sauce
1 tsp sesame oil
1 large egg

Directions
Heat 1tsp the olive oil in a wok over medium heat. Season the shrimp with salt and pepper and cook for about 1-2 minutes on each side, until just opaque. Remove the shrimp from the pan and set aside.

Add the peas, scallions, garlic, red pepper, ginger, and pineapple to the wok and cook several minutes, until lightly browned. Remove from pan and add to the shrimp.

Add the remaining 2 tsp olive oil to the pan, and stirfry the grated cauliflower for a few minutes, until tender. Add the set aside shrimp and pineapple mixture and stir to combine. Create a well in the center and add the egg, scrambling and distributing through the cauliflower. Add the soy sauce and sesame oil, stir to coat, and serve immediately.

    You are so creative… I love this!I don't like Chinese-restaurant style fried rice, because I think eating any rice with Chinese food just makes me too full. I want to save room for the good stuff!
