Chicken Parmesan Burgers |
We’re a household that likes our burgers, just hardly ever with beef and never quite your traditional. When I saw Elly’s Chicken Parm Burgers and realized I had some sliced mozzarella to use up, these went right on my list for the following week.
These are so easy to make; I just used chicken breast that I ground up myself in the food processor. And since they come out beautifully broiled, you don’t have to fuss with trying to get the lean meat to stick together on the grill and worrying about breaking them as you cut in to check doneness. In a bold move for me, I just trusted Elly’s indicated cooking time and didn’t even check to make sure they were done – and they came out absolutely perfect! I cut the recipe in half to make two burgers, but I used a little extra meat to make extra hearty burgers. We served these on Arnold sandwich thins along with some balsamic roasted green beans. The husband commented that the burgers were like, “a big meatball, so delicious” and that he didn’t miss the beef at all.
Chicken Parmesean Burgers

10oz boneless, skinless chicken breast
1/2 oz grated parmesan cheese
2 tbsp plain bread crumbs
1 tbsp chopped fresh parsely
1 tbsp chopped fresh basil
1 clove garlic, finely minced
2 tbsp minced sweet onion
freshly ground salt & pepper
1/4 cup pasta sauce
2 slices mozzarella
1/2 cup sliced mushrooms
Cut the chicken into chunks and add to a food processor. Pulse a few times until it’s almost full ground, then add the cheese, bread crumbs, parsely, basil, garlic, onion, salt and pepper. Pulse a few more times to combine, but be careful not to overwork it.
Saute the mushrooms over medium heat in a skillet coated with cooking spray; season with salt & pepper.
Meanwhile, preheat the broiler. Form two large patties from the chicken mixture and place on a foil lined baking sheet. Broil for 4 minutes on the first side; flip and broil 3 minutes. Remove from oven and top each burger with 2 tablespoons of sauce and 1 slice of cheese. Return and cook 1-2 minutes more. Serve the burgers with the sauteed mushrooms on your favorite bun.

These were tasty and not so "heavy" as regular chicken parmesan. I did save myself some trouble and mess and used already ground chicken.
