My No Recipe Chicken Chili Recipe

Sometimes, the best things in life are thrown together without a recipe. This is what happened with my chicken chili, something I started making last fall and which then became a dish very often requested by my fiance. And why not? It’s delicious. It’s easy and full of flavor. And rather versatile to what you have on hand. I’ve tried my best to turn it into a recipe so that I may it with you, but don’t fret if you can’t follow it exactly – chances are, your white chicken chili will turn out pretty tasty anyway!

Start by placing 3 chicken breasts in a pot, and cover with water. Bring to a boil, then simmer till cooked through.

Meanwhile, chop 1 large onion and place in a large pot coated with cooking spray, over medium heat, and begin sweating it out. Add a few cloves of minced garlic, 2 chopped bell peppers (I like to use a red and a green), and something for heat – this could be 1-2 minced chili peppers (I use the canned kind), a jalapeno, a big fresh green chili, whatever. Continue cooking till veggies are soft and have released moisture. Drain and rinse 3 cans of cannellini beans and add these to the pot, along with liberal (at least a tbsp each) amounts of chili powder and cumin, and whatever other seasonings you feel like – I personally think a dash of oregano adds a nice, earthy tone. Salt and pepper too, of course. Also dump in about 3/4 cup frozen or canned corn, and a can of diced mild green chilis.

At this point your chicken should be cooked through. Remove from the saucepan, but leave the water. Shred the chicken and add to the bean mixture. Then, add the chicken “stock”, a ladle at a time, till the chili reaches your the consistency you’d like. Then add a little extra, for good measure, since you will continue cooking and some of it will evaporate.

Simmer the chili for at least 20-30 minutes to blend flavors, but longer if you have the time. Garnish with your favorite shredded cheese. Something green – diced green onions, or cilantro – makes it prettier and tastier too, but unfortunately I was all out. Enjoy!

    Sounds delicious! And totally understand your dilemma in putting your “recipe” into words for someone to understand. My father taught me how to cook by thinking of the method and the pairing of the right ingredients. That’s how I have taught my sons to cook. They’ll ask me what’s for dinner and usually it’s the same thing – “I don’t know, something I threw together.” So thanks for the method and now I can make it my own.Love,Julie

    Sounds good. When I am making a recipe that I am really familiar with I make it without looking at the recipe. I forget some things and I add some new things and it comes out slightly different every time.
