Fudge-y Black Bean Blender Brownies |

Fudge-y Black Bean Blender Brownies
Yield: 2 dozen brownie bites
These brownie bites have a healthy secret ingredient, are vegan, and free of refined sugar.
Ingredients:
1/2 cup maple syrup
1/4 cup unsweetened almond milk
1 teaspoon vanilla extract
1/4 cup almond butter
1 3/4 cups cooked black beans (or 1 can, drained and rinsed)
6 tablespoons cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons arrowroot starch
1/3 cup mini chocolate chipsDirections:
Preheat oven to 350ºF. Line a 24-cup mini muffin tin with paper liners.
Add maple syrup through salt to Blendtec container, in order listed. Run the dips/dressing cycle 2-3 times, until mixture is smooth. Add arrowroot starch and run the dips/dressing cycle once more to incorporate.
Scrape the mixture into a bowl and stir in chocolate chips with a spatula.
Scoop the mixture into the lined muffin cups. Bake for 30 minutes, or until a toothpick inserted comes out with just a few moist crumbs.
Cool completely before serving. Store leftovers refrigerated in an air-tight container.
