My poor husband had a hard time with these popsicles. Every time I asked, “do they taste like cookie dough?” he’d answer, “Yes but not the same texture.”

Well, obviously! You can’t take the gritty, gooey-ness of cookie dough and put it in popsicle form but you can capture the brown-sugary, buttery goodness with flecks of chocolate chips and freeze it into a cool summer treat for a hot night. And that’s really what I was going for.

“But they’re really good.”

Ok, I’ll take that. Besides, I have to agree here. Really good.

Really easy too – just a few simple ingredients like dates, maple syrup, So Delicious cashew milk beverage and chocolate chips. No butter, no sugar – that’s right, these are vegan and healthier too. Guilt-free sweet treats are crucial to my summer sanity. Besides, who wants to be beating up butter and sugar  for cookies in sticky summer heat? Not me.

Chocolate Chip Cookie Dough Popsicles

Yield: 8-10

Vegan, naturally-sweetened, and totally delicious way to enjoy cookie dough on a hot summer day.

Ingredients:

1 cup pitted dates
2 cups So Delicious Vanilla Cashew Milk Beverage
2 tablespoons lucuma powder (optional; if omitting add more maple syrup or other sweetener to taste)
3 tablespoons maple syrup
big pinch of salt
1 teaspoon guar gum (optional, but improves creamy texture)
4 tablespoons mini chocolate chips, such as Enjoy Life
brand

Directions:

Place dates in a heat proof bowl. Cover with boiling water and allow to stand for at least 30 minutes.

Drain dates and add to a high-speed blender or food processor along with cashew milk. Begin blending, gradually increasing speed to high, and blending on high speed until completely smooth (or process until completely smooth in a food processor.) Add lucuma, maple syrup, and salt; blend well. Lastly, blend in guar gum. Pour mixture into popsicle molds, leaving a bit of space at the top.

Add 1/2 tablespoon chocolate chips to each popsicle and stir in gently with popsicle stick. Once all popsicle sticks are in place, freeze for several hours until firm.

To remove from mold, run under warm water.

    Yum Cara! These are divine. I’m sure my kiddies would LOVE them, and so would Pete and I. We just got a Zoku. Popsicles in 7 minutes. Dangerous!

    My son has allergy to tree nuts as well here, (7 food allergies/3 food intolerances). I know it won’t quite be the same, but do you think vanilla soy milk (or vanilla rice milk) would work when nothing else can be given? Bet he would love to try these!
