Hard Boiled Egg Curry |
This post is special for a couple reasons. (I mean, they all are, but I’m about to tell you just why this one is.) First of all it’s the first time in, oh, a couple years that I’ve managed to eat something and write about it the next day. Secondly, it’s the first time in ages that I’ve followed a recipe to a “t”, with literally zero modifications on my part.
Actually, I lie. I followed a recipe a couple months ago and I sort of wished I hadn’t. So this is the first time in recent memory I followed a recipe exactly and actually liked loved it. No big surprise, given the source.
It’s been a whole year since Natalie first posted about Egg Curry, and I confess, I thought it was weird at the time. Hard boiled eggs in curry sauce? Really? I’m pretty adventurous but that one wasn’t calling my name.
But I had a change of heart. Obviously because I’m 32 weeks pregnant I’m eating lots of “weird” things.
Kidding. I haven’t gone all pickles-and-ice-cream. Yet.
But I do love my eggs, which is a good thing, because they’re a total pregnancy superfood. In fact, it’s often recommended to eat two eggs every day while pregnant for their high protein and choline content. Choline, I learned, is a b-vitamin crucial to the development of baby’s memory functions. As long as you have healthy cholesterol levels, eating multiple eggs every day is generally regarded as healthy and safe. (Note: I am not a healthcare professional; if you are concerned about cholesterol levels please consult your doctor.)
I usually get my crack on (hah!) with protein pancakes or eggs scrambled with kale, but this week I was craving a little something different and remembered the recipe I had seen last year (heck, maybe all that choline is helping MY memory!)
And thankfully, when I told my hubs we were eating curry with hard boiled eggs, he was all, “Oh! Awesome! Shashi got that once!” Shashi is his work lunch buddy, and thanks to Shashi, hubs is becoming quite the expert on Indian food by frequenting various local restaurants. I’d bet that in a restaurant you’d be likely to see this dish served with rice or naan, but I opted for cauli-rice instead (simply grated cauliflower, steamed in the microwave.)

I love Hard Boiled Eggs! But I’ve never thought of doing this. Love love the idea and recipe! I do eat 2 a day but what’s few more eggs? π

Wow, you’re fast!! I forgot to write you back last night asking how you liked it. Clearly you did. :). I ate tons of eggs while I was pregnant! I’m so glad I found a lady to buy them from who raises then in her backyard. π Egg curry is kind of odd, but I love that you tried it!

This sounds good! I have ZERO motivation to cook or be creative in the kitchen. I think it’s the result of pregnancy brain syndrome. lol π Hope all is well with you!

I was the same way in the first tri, sometimes still am! It was weird, I didn’t really have aversions or cravings, I just wasn’t interested in thinking about what to cook and actually doing it.

I did not keep track of my egg intake when I was pregnant. But I’m sure I ate my fair amount, just not 2 a day.

THAT is quite possibly the most beautiful bowl of eggs I have ever seen! Wow, what a wonderful food photographer you are! π I loveeeee eggs! And when I eat them, I eat the omega-3 enriched, free-ranged ones so I allow myself to eat as many as I want, usually 2-3 with some egg whites π

NOM. My body has been craving eggs something FIERCE since I got pregnant. There are days when I think I could eat 2 per meal!

Eggs combine brilliantly with a curry flavour. Cook as part of a soup using omelette strips or hard boiled eggs in a curry sauce with some plain boiled rice. Then you can go the route of egg fried rice too

Yay more egg ideas!! I had a good amount this weekend, although I have to admit I haven’t exactly given up the runny yolks, and thats like my favorite way to eat eggs now.
