It’s that time of year that starts snow falling (of course depending where you live), sweets all around, and family and friends gathering together. Oh we just love the holiday season!
Everyone loves making a quick and easy dessert, especially when you have less than an hour to gather a “plate of food” to bring to the office or neighborhood party. Our chocolate dipped peppermint coconut snowflakes can be made in no time! No standing in the kitchen for hours with this yummy dessert.

Chocolate Dipped Peppermint Coconut Snowflakes
Yield: 16-18 soft & chewy cookies
Cacao-studded, chewy raw macaroons dipped in decadent mint chocolate. A gluten-free, vegan, and naturally sweetened holiday treat!
2 cups shredded coconut flakes
3 tbsp coconut flour (or almond meal)
1/3 cup +2 tbsp honey (or maple syrup or agave nectar)
1 teaspoon peppermint
1 -2 tbsp cacao nibs (or chocolate chips)
1/4 cup coconut oil, liquid
1 mint chocolate bar for dipping, melted (about 3oz)
Place your coconut flakes and flour into a food processor. Next add in your honey, peppermint extract and cacao nibs or chocolate chips (we like the rich bitter like flavor from the cacao nibs mixed in these, but any chocolate chips would do great, or you could omit if desired!)
Pulse everything together. Batter will be sticky.
Next add in your liquid coconut oil. And mix together.
Scoop with a cookie scooper. Size and amount will vary depending on size scooper.
Place coconut snowflakes on a plate and set in fridge as you melt your chocolate bar.
We recommend melting your chocolate bar using the double boiler method (in one glass bowl place your chocolate bar and with a second bowl fill with hot water, and place your chocolate filled bowl on top of hot water bowl. let the steam begin to melt the chocolate).
Once chocolate is melted remove your coconut snowflakes from the refrigerator to start dipping. Place your coconut snowflakes into the melted chocolate with the flat bottom getting covered in chocolate. Flip over coconut snowflakes so chocolate side is facing up on plate. Since the coconut snowflakes were cold, the chocolate will start getting hard pretty fast. Then you can flip back over.
