Sunday Funday – April 29, 2012: Clean Eating Dinners

Have you noticed that things have been a bit light around here lately?

It would seem as if we’re not eating dinner, just quickie sides, breakfast, snacks and dessert. Can you guess what’s in the oven right now?

Rest assured, we haven’t totally abandoned our ways. We’re still eating balanced meals full of veggies and lean proteins, and there’s a real meal on the (coffee) table each night. It’s just that every single one of those meals has been part of my latest freelance project for the next special edition of Clean Eating Magazine, coming out in the fall. Exciting? Yes! But between being here-there-and-everywhere this month*, there hasn’t been much time for other cookin’. I apologize for leaving you a little hungry.

With that in mind, I thought it would be fun to share some of the meals I’ve created that have recently appeared in the Clean Eating Exclusives e-newsletter. If you haven’t subscribed, you’re missing out!

*I swear, I’m not normally such a jet-setter. After this weekend’s trip, Ben and I will probably be sitting on our tushes in Worcester for the rest of this year. But if you’re curious, here’s where we’ve been:

  • Vegas, for fun and the Jewish Federation of North America’s TribeFest (aka, young professionals’ leadership conference)
  • Chicago, for Nourished (did you catch my presentation on Food Photography Made Simple?) and visiting friends
  • New Jersey for a family bat mitzvah, and Connecticut on the way back to visit friends
  • Bahamas! Taking off tomorrow for a company trip. That would be Ben’s company, obvi. I don’t think Cara’s Cravings can quite afford that yet 😉

    You have been quite the jetsetter lately! I’m jealous. Moving out of bed to the couch is effort to me! But this post is perfect timing… I was looking for slow cooker meals this week before the baby comes, so thanks!
