Do you ever feel totally and utterly misunderstood?

It’s like announcing you’re going to major in Chemical Engineering (who DOES that?)  and being asked by your aunt’s bff, “So you’re gonna drive a train and give perms?”

Or like when someone says, “What about running?” blank stare “Wait, you really don’t run?” blank stare “No, really, how many marathons have you run?” in response to, “I stay in shape by lifting weights.”

“Yes, really.”

And when friends ask, “Cara! Please give me all your 20-minutes-or-less recipes that even my picky husband and 2-year-old will eat. I know you’re hoarding them somewhere.”

Sorry to say, I’m not. (But I thank you for thinking I’m so capable!) I make no false claims that the recipes I create are perfect for every busy family with a variety of taste buds. I cook the things me and my husband like to eat – and I know I have a lot of luxury given the fact that I’m only cooking for two. Two non-picky people who go ga-ga over brussels sprouts almost as much as we do fro-yo.

Someday, that will have to change and as nice as it is to hope that our little ones will eat exactly what we do and that I’ll have all the time in the world to cook, that’s probably not the case. It’s a challenge I’ll rise to when the time is right.

In the meantime, I’m pretty proud of this recipe. I have no idea if your toddler or husband will eat it, but we happen to really like it. And, in my opinion, it’s easier and quicker than most of my recipes. Less than 20 minutes? Nope, not there yet. But quick-er than others. And it since you get your protein and veggie all cooked together in one dish, it makes less of a mess.

Perfect for my non-picky dish-washing husband.

Orange-Soy Chicken and Brussels Sprouts Skillet

Yield: 2 large servings

Tender, juicy chicken thighs are roasted with brussels sprouts in ginger, garlic, orange juice and soy sauce for an incredibly easy and flavorful one-dish meal.

Ingredients:

1 1/2 teaspoons olive oil, divided
3/4 lb boneless, skinless chicken thighs
1/4 teaspoon salt
freshly ground black pepper
1 large shallot, minced
2 cloves of garlic, minced
1 tablespoon grated fresh ginger
1 orange, juice (1/4 cup orange juice)
1/4 cup reduced sodium chicken broth
1 tablespoon reduced sodium soy sauce or wheat-free tamari
1 teaspoon coconut sugar*
12oz brussels sprouts, trimmed and quartered lengthwise

*Coconut sugar, also known as palm sugar, is an unrefined, all-natural sweetener that retains a lot more nutrients than other alternatives. It tastes similar to brown sugar, and can be substituted cup-for-cup for sugar in almost any cooking or baking application. If you'd like to buy it online, look for coconut sugar in my shop. You can also substitute an equal amount of another sweetener, such as brown sugar, sucanat, or honey.

Directions:

Preheat oven to 400ºF.

Heat 1 teaspoon olive oil in an oven-proof skillet over medium-high heat. Sprinkle the chicken thighs with salt and pepper. Place in the skillet and cook for about 3 minutes per side, until lightly browned. Remove the thighs and transfer to a clean
plate.

Reduce heat to low. Add remaining ½ teaspoon olive oil to the same skillet. Cook shallots for about 3 minutes, until golden, stirring occasionally. Add garlic and ginger and sauté for 1 more minute.

Increase heat to high. Add orange juice,chicken broth, soy sauce or tamari, and coconut sugar. Bring to a boil. Reduce heat to low, and simmer for 3 minutes.

Turn off heat. Return the chicken to the skillet, spooning the sauce mixture over the chicken. Scatter the brussels sprouts over the chicken. Transfer the skillet to the oven, and bake for 20 minutes, or until chicken is cooked through and the roasted brussels sprouts are crisp-tender.

    I have a wicked sweet tooth and would love to take a course like this; I’ve tried south beach and others along that line; but I always go back. I’ve always suspected that not only sugar, but artificial sugar, can cause weight gain; and I eat way to much “diet” type sodas, drinks, etc.

    I don’t need an entry for this, but I did want to say that it seems like a really great giveaway. I gave up sugar last fall for 4 weeks after feeling the sugar monster just dominating my thoughts and actions and dictating my food choices. I ended up having a huge transformation in my energy level, emotional state, craving pattern, and more that I decided to give it up again, this time for lent.

    After the first month sans sugar I noticed that my eating habits had shifted and I ate a lot less sugar in general. I had healthy habits before and so I was really surprised with how much of a difference it made. I highly encourage people to take several weeks away from added sugars and just see how it is influencing their lives.

    Someone emailed me asking for easy baking recipes once…ummm….?

    It just doesn’t happen in my kitchen. not that I don’t love plain old CCC’s but if I’m baking, it’s gonna be insane.

    I adore brussels sprouts possibly as much as you do…and I’ll be force feeding them to my kids if need be! Love this dish!

In the recipe, you put an asterisk after the coconut sugar ingredient….but then, there’s no commentary or note to be found after, to indicate what you wanted to say about it. Did you forget, or is it just a typo?
    Love brussels sprouts, and we eat them all the time. This looks very good!

    Hello, my name is Christina and I am a sugar addict. Yes, that seems like a joke but my addiction is impacting my life. I have secret candy stashes throughout my house so that i don’t have to share, I troll the office lunchrooms looking for sweets to hoard, and I know whose desks have candy dishes with my favorites and visit often. Having recently read CLEAN by Junger, I recognize the mood and energy swings, I know I need to cut them out because they are preventing me from losing weight but I am afraid to try. (I’m crabby as it is!) But I need this. I need to break the habit to finally close the door on my old unhealthy ways and live fully in the healthy lifestyle that I am trying to create for myself.

    After years of no sugar, I “fell off the wagon” unintentionally when I was diagnosed with pancreatitis at 15 weeks prego. Unfortunately the only thing I could keep down was anything white!     I believe that learning to detox your body of any substance is a very good skill to have. I eat healthy, I exercise, I love healthy wholesome foods, and I don’t eat lots of sugar, especially since it gives me massive headaches. So, I try to avoid it as best as I can, but one thing that gets me is the day to day temptations. It is hard not to have sugar when you have a 9 year old son who likes it and sometimes wants to share the happiness of having ice cream along with you.
    I want to pass along to my son that eating everything in moderation is ok, I don’t want to send a message that he cannot eat something, so when it comes to sugar and he wants to try a new treat with me I go ahead and do it, or if he offers me something to try, I try with him. I love trying all kinds of foods with him (he is pretty adventurous!), and that apply to sweets too.
    Plus, sometimes I am alone in the house studying or working and I feel the need for a little sweet, something to make me happy, and having sweets around makes me end up eating them too.
    Learning how to conquer this day-to-day challenges, and how to maybe find alternatives for the sweets available (for both me and my son), would be a wonderful skill to have! Especially since I would be able to apply it to other eventual cravings and “addictions” that might surface, and will enable me to teach my son how to reach for better options when it comes to sweet foods/treats.

    Over the course of the past eighteen months, I’ve worked really hard to lose 40kg. I’ve gone from being overweight to being a healthy weight. I can exercise and I try to eat right. I have a massive sweet tooth, not so much for sweetness itself but because I love the textures of baked goods. I’ve done really well cutting out processed foods and fast foods but sugar is something that I find really difficult to get off my back. I did a detox in January and cut out all forms of sugar (including most fruit) and felt incredible, even better than I felt when I cut out gluten (I’m gluten intolerant). It was amazing. Since the detox I’ve tried to avoid sugar as much as possible but I have relaxed a bit with fruit and maple syrup/honey. This was a mistake, because now I’m on this slippery slope where I’m not looking for added sugars in the things I buy and sugar is creeping back into my life and I don’t want it too. When I start the day with something sugary, I have to eat again so quickly, even if what I ate was substantial and balanced. It really affects me. I want to be happy without sugar, without wanting sugar and I need help to train myself to do that.

    I began eating gluten free with a few bumps in the road, but have done well with it. Now add sugar restrictions, and I’m finding it tough. Who knew giving up sugar would be more difficult than giving up gluten?

    Recently found out I have a yeast and cortisol imbalance, and have been struggling ever since to make sense of all the plethora of info out there, contradicting each other. But I do know that decreasing sugar makes me feel different…better, more in control. I really want to take charge of my health, and show my kids that what is happening to me does not need to happen to them.

    Since finding out I’m intolerant to gluten, dairy, eggs, and a number of other common foods, I’ve managed to completely clean up my diet and I’m now free of food addictions and eating nothing but whole foods – except when I cave into my sugar cravings! I try to stick to the rawest and most natural sweeteneres possible, but I’d like to end the cravings completely. It’s the last thing I need to conquer before I can be completely happy with my diet!

    I definitely need the sugar detox! Sugar cravings have been a huge part of my life and very difficult to deal with. There is not a lot of help out there for sugar addicts. This course would be an amazing opportunity!

    What a gracious offer to allow some one free access to what seems like it would be a life changing class. Life changing for an entire family. I”ve craved the same sweet things as I have been all my life, just like I did as a young girl. I”d be too humiliated to say just what I’ve downed today. My poor body. My husband was embarrassed for me after he found out, he was shocked also, but it was his embarrassment for me that stung the most.     I lost 60 pounds last year, had foot surgery and gained 30 pounds back, i cant fit into any of my clothes and i do well all day with my foods then the sugar cravings come and i blow it, if i could just detox from sugar i would feel so much better, i cant do it by myself i so need help. Please, its the rest of my life, i am a nurse and have spent 28 years taking care of others and now i need some help taking care of me…i would so be a good person to do this with…thank you for the opporturnity…

    Thanks so much for this giveaway! This could help so many people!! Most recently I’ve been experimenting with refined sugar-free/reduced sugar/sugar-free baking; i bought coconut sugar at a local indian store(it comes in bricks that need to be grated, like exercise built into making dessert 😉 ) and a huge bag of stevia in the raw, as well as stevia seeds so I can have stevia plants in my garden! I have used xylitol in a brown sugar sub in the past but it has that wierd cooling mouthfeel? I would love to learn more about living and baking sugar free, for myself to further reduce my sugar intake/ sweets cravings but I want to help my diabetic grandfather who is in a home and manages to sneak out to mcdonalds and the candy aisle at walgreens during dr’s appointment outings and truly doesn’t give a damn. I can’t change his opinion but bringing him sugar free and less processed indulgent treats might at least open his mind.. thanks again for the giveaway!

    I would love to get rid of my sugar addiction. I have tried to make small changes like given up coffee because I crave the creamer in the coffee not the coffee itself. I work out 6 days a week and I know I am sabatoging my efforts by sneaking in things that are not allowing me to take off the 20+ lbs I need to lose. I have MS so we are a gluten free family as it is ( husband and daughter are also gluten intolerant) and with the added benefit of removing the sugar I think we woukd be that much more healthy.     What a great giveaway – I think the whole world could benefit from a sugar detox! I’ve had a sweet tooth my entire life, but sugar addiction is something I’ve been struggling with badly for the past few years. I typically eat healthy all day, even bake with natural unrefined sweeteners… but the cravings hit hard at night, whether from habit, boredom or addiction 🙁 That’s when I grab the no-effort-to-make processed foods like cookies, chocolates, and cereals. This would be a great boost to kick the habit and take control of my cravings for good. I’d loooove to win, but whoever does will benefit I’m sure!!

    I made this recipe last week and had a bit of trouble following the instructions. The instructions call for garlic, but this is not in the ingredient list so I was unsure about how much to use. It then says to add the lemon juice (which I assume is supposed to be the orange juice) and the chicken broth, but it doesn’t indicate when to add the soy sauce. Nor does it indicate when the coconut sugar (or substitute) should be added. I am not confident in my cooking skills so these problems with the recipe really tripped me up in the middle of making the dish.
