Top 2011 Husband-Approved Healthy Recipes

Happy New Year, Friends!
I hope you had a wonderful evening celebrating with loved ones, full of laughter, affection, and of course, good eats and drinks.
Now that the streamers are picked up, the martini glasses washed and put away, and you’re feeling all bright-eyed and bushy-tailed (wishful thinking) it’s time to move on to important business: menu planning! (Because it’s January, and we’re supposed to be “good”, hence we can no longer survive on the holiday cookies stuffed in the freezer.)
I know that a bunch of you ladies out there have the best intentions of watching portion sizes, cutting sugar, and increasing your lean protein and veggie intake, which leaves you wondering, “What the heck is HE going to eat?” I have a simple answer. It’s not rocket science. He’s going to eat the very same things you are. And how do I know this? I’ve asked Ben to pick his favorite dinner from every month on 2011, so I can personally guarantee you that at least one man has enthusiastically devoured these dishes. This was a popular post last year, so I couldn’t resist a second edition. From the man himself, here are Ben’s favorite recipes from 2011.
January: Chicken Parmesan Burgers

(not technically a new recipe, but one he couldn’t resist!)

February: Mantwo (Afghan Beef Ravioli with Split Peas and Yogurt Sauce)
March: Morcoccan Chicken with Chickpeas, Raisins and Dates
April: Crab and Asparagus Frittata
May: Tandoori Chicken Tacos (not surprisingly, one of your favorites too!)
June: Spicy Mango Black Bean Turkey Burgers
July: Lebanese Tostadas
August: Mediterranean Date and Olive Pizza on a Chickpea Crust
September: Shawarma Pizza on Chickpea Flour Crust
October: Shrimp and Artichoke Barley Risotto
November: Spaghetti Squash Gratin with Chorizo and Kale
December: Acorn Squash with Cornbread, Sausage and Apple Stuffing
And that most certainly concludes the 2011 roundups. I promise to be back with new recipes soon!

I never worry about what my husband is going to eat.  If he doesn't want what I make, he knows where the kitchen is.  (He just doesn't know how to work anything in it)
