Apple-Dijon Salmon with Roasted Broccoli Rabe |
I may be zero help when it comes to planning your Thanksgiving menu or helping you decide in advance what to do with your turkey leftovers (oh how I wish I had turkey leftovers to speak of). And I have not the time nor natural cleverness to come up with something delightfully witty to make you laugh out loud at your desk when you should be working. or when you’re supposed to be be spending quality time with your partner on the couch, but the only snuggling going on is between you and your laptop.
(No, neither of those things ever happen in my life.)
But this blog is still good for somethin’. At least, I’d like to think so. What I can give you is a guaranteed easy, healthy dinner recipe designed to combat both the time crunch and belly bulge you’re bound to experience next week. My goal this week is also to eat SUPER healthy so that the damage control after T-day won't be so unreasonable. I also never take leftovers home with me…I get ONE DAY to eat what I want, and then it's over. You've got me craving salmon something fierce, which I haven't done in FOREVER. Off to check it out!
