Shrimp, Black Bean and Pineapple Foil Packets

I’ve always considered myself a little late to the game. I’m not a late person in general (though not particularly early either); it’s just that I’m always a season or two behind the trends.

One could say I’m doing my spring cleaning now, in mid-summer. Sadly, it’s really starting to feel like late summer, and I’m getting a little worried that time is running out. Time to eat a lobster roll, roast marshmallows, and grill anything and everything I possibly can. These are the factors by which I gauge my summer success.

And I know you’re with me. So maybe you’ve had a lobster roll and a s’more or two (please, don’t rub it in) but I know you haven’t grilled enough. I’m certain of that because you haven’t made this. This amazingly simply and succulent packet veggies and shrimp laced with sweet pineapple, quickly tossed on the grill. It’s truly a perfect summer dish. And sadly, it’s been sitting in draft mode waiting for worthy words to come to mind.

But they didn’t, and probably won’t, because this is one of those “there are no words” kinds of meals. So rather than wait any longer, I’m cleaning out my drafts so that you can be sure to get your grill on as long as summer shines on  upon us.

Shrimp, Black Bean and Pineapple Foil Packets
Printable Recipe

8oz raw, medium sized shrimp (peeled, deveined)
1 cup cooked black beans
3/4 cup (6oz) finely diced pineaple
1/3 cup (1 1/2 oz) finely chopped red onion
2 tablespoons minced jalapeno pepper
1 tablespoon grated fresh ginger
2 tablespoons lime juice, divided
1/2 teaspoon ground coriander
3/4 teaspoon ground cumin, divided
1/4 teaspoon chili powder
pinch of salt
freshly ground black pepper
2 tablespoons chopped cilantro
1/2 avocado, diced

Lettuce wraps, tortillas, or a grain (rice, quinoa, etc) for serving, if desired

Preheat grill to medium.

Rinse the shrimp and pat dry. Sprinkle with 1/4 teaspoon cumin, chili powder, salt and pepper. Toss to coat. Set aside.

In a medium bowl, combine the black beans, pineapple, red onion, jalapeno, and ginger. Stir in 1 tablespoon lime juice, coriander, and remaining 1/2 teaspoon cumin.

Spray two large pieces of aluminum foil with cooking spray. Spoon half of the black bean mixture into the center of each and top with half of the shrimp. Squeeze the remaining lime juice over the shrimp. Bring the edges of the foil together and fold down, sealing well.

Place the foil packets on the grill, cover, and cook for 10-12 minutes, until shrimp are opaque.

Carefully open the foil packets and stir the contents. Top with the diced avocado and sprinkle with cilantro.

    OK, you just cemented what I'm making the next time my mom (doesn't eat red meat) and sister come over for dinner.  I can assemble the packets ahead of time and pop them in the oven (NYC apartment, no grill).  Easy breezy and they look so darn pretty!  Thanks, lady!

    This looks amazing. I think I am going to make this for dinner tonight. I have all of the ingredients and my kids will devour this. I love using packets on the grill. I make veggie packs and fish in them all of the time!!

    Thanks! you can definitely use beans from a can. I've been trying to make an effort to cook my own beans lately and write my recipes as such, since starting to do work for Clean Eating Magazine and realizing how much sodium the canned beans have. But of course canned beans will work 🙂

    Your grilled foil packets inspired me to create one for dinner tonight. I made mine with chicken breast seasoned with curry, cumin, ginger,garlic, mango chutney and toasted sesame oil and onions, carrots, snow peas, red peppers and mangoes, served on a bed of organic quinoa– yum!

    I think you might be better off in an oven, which would be more like a closed grill than just a pan on the stovetop, know what I mean? (I haven't tried either though – just guessing!)

    Glad you like the sound of it! You are totally on the right track as for how to serve it – read the ingredient list again, see the last item! We chose lettuce wraps. I did not serve an additional side dish as I felt it had all of my nutrients covered, but you could always add some grilled corn or zucchini.

    I m made this  tonight on my inside on the counter Cusinart panini/griddle. Worked out fine.Very yummy! I added yellow andred peppers for more color.Also, I made guacamole out of the avocado ( can't diced an avocado to save my  life!) its definitely a keeper
