Gardein Party for Meatless Mondays: BBQ “Chicken” Pizza

Good news, kids! Unlike last time I tried to buy Gardein BBQ Shreds, this week, my stars must have be in alignment. Because I didn’t waste my time traveling to two different grocery stores only to find they were sold out. Rather, I found them in the first place I looked, and there were plenty of them. Which is a good thing, because I’ll probably want to get some more.

Not that last week was a total lost, oh no. I ended up with Southwestern “Chicken Enchiladas” made from Gardein Santa Fe Good Stuff. And I didn’t even tell you what I did with the other piece! Share it with Ben? No way. It got chopped up and scrambled with an egg and some shredded cheese to make a protein-packed post-workout lunch.

But I digress. This is a post about BBQ. When I think of BBQ, there are no smokers in sight, no big butts of pork or rib racks slathered in sauce. You see, I’ve barely stepped foot in the south. But I did spend a heck of a lot of time at California Pizza Kitchen while working there in high school. The truth is, even if I never worked there, I probably would have been there a lot because their BBQ chicken pizza is THAT good. Sweet and spicy BBQ sauce, tender meat, zesty red onions, smoked gouda cheese, and a sprinkle of fresh cilantro.

I’ll be quiet for a moment while you think about that. Mmmm.

When I saw that Gardein made a vegetarian BBQ Shredded “Chicken”, I knew in a second that I’d be recreating that pizza. In healthier form, of course, using my beloved Trader Joe’s low-carb tortillas as the “crust”. But have no worries: there was no skipping on the smoked gouda, no way. And there was compromise in taste when it came it tangy bbq sauce and satisfying shredded “chicken.” Like I said, it’s a good thing there was a lot more where this came from, because I’d gladly gobble it up anytime.

Especially when Ben is the one throwing it together. That’s right, this meal is husband-proof and husband-approved. Win!


BBQ “Chicken” Pizza

4 whole wheat, reduced carbohydrate tortillas, such as Trader Joe’s brand
1 package Gardein BBQ Shreds
1/2 cup thinly sliced red onion
2 oz smoked Gouda cheese, shredded
freshly chopped cilantro

Preheat oven to 450ºF. Line a baking sheet with foil and spray with nonstick cooking spray. Place the tortillas on the baking sheet.

Spoon the BBQ Shreds on top of the tortillas, dividing evenly. Place the onions and cheese on top.

Bake for 10-12 minutes, or until tortillas are crisp and cheese is melted. Sprinkle with cilantro before serving.

    Their BBQ chicken pizza really is THE best. There's something about those onions that make it. *drool* Your rendition looks awesome – still need to locate these BBQ shreds!

    This looks incredible.  I agree about that CPK BBQ chicken pizza…but can't wait to try your healthier version.  Can I ask how much those BBQ shreds cost?  Sometimes I am surprised by how expensive meat alternatives can get.

    not exactly cheap. At almost $5 I'm not sure I would just buy them to try on my own, so having a coupon from Gardein helped. However, now that I've tasted them, I wouldn't be be opposed to picking them up to help make a quick and easy dinner.www.carascravings.comsent from my DROID

    Great Idea! I love that you made a bbq style pizza. Plus Ive learned when its husband approved your in business. ha! All I know is my hubs is a picky eater so when I make something he loves I make a good mental note. How was your weekend?

    It's been fab! We're actually in Oregon right now. We spent 3 nights in Portland and last night in Mt. Hood; taking a red eye home tonight. I'm so ready to move out here!

    bbq chicken pizza is an absolute favorite of mine, so it's only fair that the meat-freers get a version too. 🙂
