While I’m still getting back to menu planning and cooking real meals, I’d love for you to check out my second recipe appearing in the Clean Eating Magazine newsletter and website, Grilled Zucchini & Goat Cheese Rollatini with Raisins and Pistachios. I whipped up a batch of these to take to a big party a while back and they made a fun and tasty addition to the spread. The flavors popping through in the creamy goat cheese filling, like pistachios, raisins, fresh mint and a burst of tangy lemon, make an unexpected and enticing combination. They’re surprisingly easy to put together too; sure, the zucchini requires grilling, but you’ll find that the thin slices cook very quickly. If you’re looking for a simple and unique appetizer to bring to a party this summer, and getting plenty of compliments is your thing, think about these!

    I've had something similar before and it is a fantastic appetizer for a crowd!  Yours looks more interesting due to the additional flavors and textures. Yum!
