Pomegranate-Chili Glazed Tuna |
This weekend I learned that I have the sweetest friends. I mean, I already knew that, of course, but they just got a little sweeter. They apparently only read one food blog: mine. And because of that, they think my pictures are wonderful.
Clearly, I’m the only blogging dork in the crowd, regularly reading over a hundred per week and being constantly reminded that I have zero creativity when it comes to food styling and no clue how to properly set up lighting and use my camera accordingly.
I’m trying, I swear. And in the process of changing my lighting and backgrounds and reflective thingamajigs, I’ve made this sweet little recipe a handful of times. Each time I make it, I tell myself this will be the time I get the perfect shot to capture how wonderful it is. I end every photo session a bit disappointed, but when I hear how much my husband loves it – again – I tend to forget about that.
I’m ending the waiting game for now and sharing it with you as is. Meanwhile, if everyone could keep Tastespotting and Foodgawker a secret from my sweeties, I’d truly appreciate it.
Pomegranate-Chili Glazed Tuna
Adapted from Food and Wine
I’ve made this recipe with swordfish too, and it’s equally as delicious. For swordfish, marinate for up to one hour and increase cooking time.
4 ahi tuna steaks, about 6 oz each
1 medium orange
1 lime
2 cloves of garlic, minced
1 tablespoon freshly grated ginger
1/4 cup reduced sodium soy sauce
pinch of pure stevia extract (a little less than 1/8 teaspoon)
1 cup pomegranate juice
1 tablespoon chili garlic sauce
pinch of pure stevia extract (a little less than 1/8 teaspoon)
pomegranate seeds, fresh chopped cilantro, and/or sliced green onions, for garnish
Place the tuna steaks in a baking dish. Squeeze the juice from the orange into a small bowl. Zest the lime, and set the zest aside for later. Squeeze the lime juice into the bowl with the orange juice. Add the garlic, ginger, soy sauce, and stevia. Whisk together and pour over the fish. Marinate for 20-30 minutes, turning occasionally.
Heat a grill or skillet over high heat. Remove the fish from the marinade and strain the marinate into a small saucepan. Add the reserved lime zest, pomegranate juice, chili garlic sauce, and another pinch of stevia. Bring to a boil, and let cook until thick and syrupy.
Meanwhile, sear the fish for 2-4 minutes on each side, brushing some of the glaze on while cooking. Drizzle the remaining sauce over the fish upon serving, and garnish as desired.

Haha I feel the same way whenever my friends tell me they really like my pictures. but I have to say, as someone who spends quite a bit of time on tastespotting and foodgawker, I LOVE your pictures! And I always find your food super appealing. I've become obsessed with pomegranates lately and, coincidentally have many bottles in my fridge. I think I'd better make this!

LOL, oh I know, I too, LOVE my friends that have no idea about other food blogs π Too funny! I am also always trying to figure out my photography, and I guess it's just a process. When I look back at the pics I was taking even 6 months ago, I see improvement. I think this meal looks AWESOME and you did a great job.

If you want to feel better about your photos, all you have to do is take more pictures of cupcakes. Because they are inherently adorable. π Seriously, savory things are so much more difficult to photograph than sweet things, and your blog is mostly savory. Still, I personally think your photos are great. And I'm glad I can go ahead and work on my pomegranate-glazed salmon post now!
