Tribute to Joseph’s Low-Carb Lavash |
One of the things in life I just don’t have the time for is taking pictures of everything I eat to share with you. Honestly, it would be rather boring. I guarantee you’d see a Chobani Greek yogurt and a dark chocolate Zone bar about 98% of time. I have a couple breakfasts and lunches that I rotate through, but dinner is where the variety is at.
But even so, I don’t take pictures of dinner every day. I don’t bother to share the things I just randomly throw together that hardly qualify as real recipes. Again, you’re not missing much. But one of the things I do like about bloggers that share all of their daily eats is that I often find out about their favorite products that are new to me, or new ways to use things I already buy.
I know I’ve mentioned and showed you Joseph’s Low-Carb Lavash before. These huge, soft wraps have just 100 calories each. They are packed with fiber and have 10 grams of protein. And, they get wrapped around tuna or tofu or chicken or grilled vegetables everyday for my lunch. But they also make perfectly easy and paninis or flat bread pizzas. You see here?
Up above we have a grilled panini stuffed with grilled summer vegetables, basil, sun dried tomatoes, and smoked goat cheese. It was delicious! I prepared it on the grill outside, but a griddle would work too. If it reminds you more of a quesadilla and you’d rather call it that, go right ahead.
And below we have an oven-baked pizza with fresh spinach, tomatoes, artichokes, onions, olives, and a light scattering of cheese. Just 10-12 minutes in the oven on 425ºF turns the soft wrap into a crispy golden crust. I could eat the whole big thing by myself, savoring plenty of fresh flavor in each bite, and not feeling like a bloated balloon full of carbs by the end.
I hope you don’t mind a random post like this one, without a recipe, but rather just an idea for you to much on.

I made lavash pizzas last night- and have a whole bag of them leftover. Never thought to make paninis! Great idea! Thanks! 🙂

I LOVE the Lavish Rollups as well as the small tortillas. Josephs is the BEST!

I haven't tried it. I must admit that if I am whipping up a quick pizza TJ's dough is my go to. These look fantastic though and probably a lot healthier than what I am eating!

That's actually what I like about journal style bloggers too. Sometimes we need something other than a full blown recipe. No one can cook an elaborate dish for every single meal. I need to find these joseph's lavash breads. I like TJ's low carb tortillas (just 50 cals each).

I'm the same way. I try to change it up but usually I don't have time to take photos and post everything. I haven't tried them but man, they sound great. Especially since I'm trying to cut way back on my carbs over the next few weeks. I have been using my PB2 though!

I'm so with you Cara. Everyone would be so so so bored if I posted what I eat at every meal. I love these wraps! I used them all the time in college. Good stuff.

I love these things. I just bought some again last week after a few months without them. I agree with you about the food. I eat pretty much the same thing for breakfast and lunch every day. Not exciting! Dinners are different but sometimes are the same things, too.

This is my first time on your blog and I just wanted to say hi! I agree with you about lunch and breakfast I pretty much live on cereal/oatmeal and chobani everyday and dinner is where I have a lot more variety! Your pizza looks amazing! Looking forward to following you! 🙂

What a splendid idea! I love this and could eat the whole loaf too! Love lavash and its crispy goodness and with toppings like this, I would be in hog heaven.

OH yes! I am a big fan of Joseph's Lavash roll-ups and their low-carb pita's!! Not even the fact that they are low carb, they are just really good…soft and yummy 🙂
