Sweet PB&Berry Omelet

Here’s a recipe you can file along with just about anything I’ve made with cottage cheese: it might sound a little strange, but if you can just trust me, you’ll be glad you did.

Of course, you can also trust Jen, the Beantown Baker, who’s been known to enjoy a PB&J omelet. Or Naomi, the Fit Foodie, who savors sweet fruity breakfast wraps.

Or maybe if you just like blueberry blintzes, and you agree that peanut butter makes everything better, you’ll see where this is going.

Simply put, a sweet egg white omelet oozing with melted nut butter and bursted blueberries is one of the tastiest and healthiest ways to get in your protein, good fats, and antioxidants. What more could you ask for?

PB & Berry Omelet

1/4 cup egg whites (equivalent to 2 egg whites)
8 drops liquid vanilla stevia, or other sweetener of choice
dash of cinnamon
1 heaping tablespoon of peanut butter
handful of fresh blueberries

Heat a nonstick skillet over medium-low heat. Whisk together the egg whites, stevia, and cinnamon. When the pan is hot, spray with nonstick cooking spray and pour in the egg white mixture. Cook until almost set, gently moving around with a spatula.

Drizzle the peanut butter over the omelet (hint: warm it in the microwave for 60-90 seconds on low heat) and sprinkle the berries on top. Fold the omelet in half and cook for about 5 minutes more, until berries begin to pop. Serve immediately.

    I'll take PB+J any way I can get it. I actually really like egg sandwiches with jelly, so is adding PB that much of a stretch? I think not.

    Thanks for the vote of confidence! When I posted this on my blog, I definitely got a lot of comments about not being so sure about the combo. But like you said, it's just one of those things you have to try. Love the idea of just using fresh fruit instead of jam.

    I've seen Jen's post on this combo before. It still scares me but I'm really thinking I should just go for it! I'm sure it will be at least edible if not better 😉

    I could eat this! One of my favorite breakfasts is toast with strawberry jam topped with an egg over easy, delicious! I always get strange looks from friends when they visit though…They don't know what they are missing.

    This looks so good! This is my first recipe I've seen using the vanilla stevia drops. I use it everyday in my water. I think my son would like this but I may use some strawberries instead of blueberries for him. That's what we've been using for pbj sandwiches instead of jam. Thanks for a great idea!

    I mentioned this when Jen posted this, but my hubby always puts PB on his eggs – apparently it's weight lifting diet thing. I've been too scared to take a bite, but with both you loving it and Apolinaras too, I think I'll have to give it a go!

    Holy Mother! I always eat egg and peanut butter sandwiches on toast, but never did an eggwhite PB in a pan with fruit! Looks and sounds yummy!

    What a great idea! I tend to want sweet in the morning but always feel like I should eat eggs because they have such great protien and are so filling. This sounds perfect!

    I just finished making and eating this and let me just say I will be making it again. It was almost like eating a yummy desert for breakfast. I think it would taste great with strawberries. I'm passing this one along to my parents for my nephews as they LOVE eggs, peanut butter, and blueberries. Definatly an energizing breakfast! Thanks!

    What a great idea! I tend to want sweet in the morning but always feel like I should eat eggs because they have such great protien and are so filling. This sounds perfect!

    I made this last night with crunchy pb and I pre-sizzles some chopped up apple and frzen blackberries… it was perfect!!
