Double Chocolate Cherry & Goat Cheese Muffins

If my recipe for Wasabi Goat Cheese Stuffed Salmon wasn’t enough to convince you to come visit me and go to my local goat cheese farm, this just might be. Because now I’m about to tell you my favorite flavor that they make: chocolate goat cheese. Oh, yes, it’s true!

And when I saw that every blogger and their mother was making Eating Well’s Honey & Goat Cheese Filled Fig Muffins, I knew immediately that chocolate goat cheese would make one fabulous variation.

If you’re still not sold on the idea of chocolate goat cheese, think chocolate cheesecake, only tangier. Surely, you enjoy chocolate cheesecake. (And if you don’t, well, you might want to get those issues resolved.) 


I went with a chocolate muffin base made healthier with yogurt, stevia, and flax. And because sweet cherries are irresistible with both chocolate and goat cheese, I threw those in too.

It took a few rounds of experimenting to get the ratio of liquid in the batter to fresh cherries just right, because the fresh fruits adds another layer of moisture. But for you, I did the grunt work. You’re welcome. (You got me – it’s not like I minded eating rounds 1 and 2. A little-less-than-perfect-muffin is certainly not a bad muffin!)

These muffins  are rich and chocolate-y with a tangy punch from the goat cheese, and a perfect way to enjoy summer’s fresh cherries. They are satisfying for breakfast or dessert. Or, breakfast AND dessert in the same day, because they won’t break the calorie bank either. You might want to make these for your friends and family, but you’ll definitely want to make extra to keep in the freezer for your beautiful self.

Double Chocolate Cherry & Goat Cheese Muffins
Printable Recipe

4 oz chocolate goat cheese, softened

1 3/4 cup (210gm) all purpose flour or whole wheat pastry flour
1/4 cup (20gm) cocoa powder
1/4 cup (26gm) ground flax seed
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon

1 large egg
1 large egg, separated
1 teaspoon vanilla extract
1/4 cup (50gm) granulated sugar
1/4 teaspoon stevia extract
1/2 cup (114 gm) nonfat plain Greek yogurt
1/2 cup unsweetened almond milk
1/3 cup extra-virgin olive oil

1 1/2 cups sweet cherries, pitted and chopped

Preheat oven to 400ºF.

Place the goat cheese in a bowl to soften.

Whisk together flour, cocoa, flax seed, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, crack the egg and one egg white; add the yolk to the bowl with the softened goat cheese. Stir together the goat cheese and egg yolk.

In the bowl with the whole egg and the egg white, add the vanilla extract, sugar, stevia, yogurt, almond milk, and olive oil. Whisk to combine.

Stir the dry ingredients into the wet mixture, and gently mix in the chopped cherries.

Spray a 12-cup muffin tin with nonstick spray. Scoop about 2/3 of the muffin batter into the tin. Spoon a little of the goat cheese mixture on top of each muffin, then top with the remaining muffin batter.

Bake for 18 minutes, or until tops are springy and a toothpick inserted in the center comes out with just a few moist crumbs.

I think the combination of chocolate, cherries and goat cheese is pretty high on the indulgence factor, and I especially love any treat that combines indulgence with good nutrition and doesn’t send you on a guilt trip.     Hi Michelle, I use pure powdered stevia extract, this product to be exact: https://www.nunaturals.com/product/46It is extremely concentrated so you just need a little bit! I keep some sugar in the recipe for volume, but I cut it down and added the stevia to make up the extra sweetness. Enjoy!

Unfortunately I was not quick enough with using it to bake and it went bad, but that will never happen again, I swear. These look absolutely delicious!
