Away we go!

Hi friends! Don’t you just love Memorial Day weekend? Racing out of work on a gorgeous Friday afternoon and leaving the stress behind feels just fabulous. Maybe you have a weekend full of yardwork or maybe you’ll be barbecue-hopping with friends and family, but the good news is, it’s all about YOU.

So this year, I’m actually not doing either of the above mentioned things, which are what I would usually be doing this weekend. Instead, I’m packing my bags and heading far, far away! This is longest, furthest away vacation we’ve taken since our honeymoon, and it feels good (and we haven’t even left yet!) We’ll be spending almost two weeks away. Oh, you want to know where?

Greece!

Specifically, two nights in Athens, five in Santorini and three in Mykonos. I couldn’t be happier. Believe it or not I’ve been getting a lot of “Why Greece?” Heck, why not?! There are things we must do and places we must see before we have kids, right? Now is the time.

Unfortunately I didn’t get my rear in gear and whip up some yummy meals for you to try out while I’m gone. But just for fun I did a little googlin’ on my own blog for the word “Greek.” Maybe you can live vicariously through me by trying some of these out?

But just keep in mind, I make no guarantees that they are actually Greek dishes! Most of them probably just turned up because I used Greek yogurt. But like I said, this is for fun! So please, dear Greek friends, take no offense ๐Ÿ˜‰  And speaking of fun, note the photo skills progression, some of these are really old.

Greek Turkey Burgers

 Lamb Chops with Feta-Rosemary Pesto

 Braised Lamb Shanks

Zucchini Pancakes and (Almost) Fat Free Pesto

Roasted Eggplant Soup with Orzo and Mini Lamb Meatballs

 Ridiculously Healthy Creamy Asparagus Soup

Lamb Skewers with Tahini Yogurt Sauce

Grilled Lamb Chops with Mango Salsa

Crunchy Lentil Salad with Curried Mango Yogurt Dressing

 Avocado Baked Mahi
Baked Pumpkin Falafel with Tahini-Yogurt Sauce
 Moroccan Chicken & Lentils
Moroccan Spiced Quinoa Cakes with Mint-Yogurt Sauce
Haddock with Feta Yogurt Sauce
Greek-Style Tomato-Braised Cauliflower

Pan-Seared Chicken with Wine-Braised Cabbage and Rhubarb
This did NOT turn up in my search, which really surprises me since it’s probably one of the most closely authentic Greek entries in my blog. Did I somehow forget to mention where this cheese comes from when I first wrote about it?
Sizzling Haloumi with Roasted Asparagus and Tomatoes in Lemon-Caper Vinaigrette
I promise to let you know how many of these I actually see on menus in Greece. I’m guessing zero. So instead I’ll have to make you a different promise: to update this summer with lots of truly-Greek-inspired yumminess!
Is it mere coincidence that the only Greek words I know are related to food? Feta! Moussaka! Youvetsi! Yes, if I stick to those words while asking for directions I’ll surely return home with a little extra pudge.
One more thing. Don’t think I’m leaving you entirely in the dust. There will be one more fanstastically awesome post before I head out that involves my good friend and our obsession with a certain TV show that’s starting up again real soon – as soon as I get back, actually! Here’s a hint. And two promises: It will challenge your culinary creativity and there will be a giveaway. Any guesses?

Greece is fantastic and so is Santorini! Take advantage of the tours and bring a bathing suit you can get ruined if you decide to jump in the sulfur pools!
