Crispy Coconut Tofu Nuggets

If you’ve never heard your husband proclaim his love for tofu, it’s an experienced not to be missed. And trust me, it is possible to achieve. You just need to make the right recipe. Like, this one.

My husband has never been a tofu-hater, but he certainly didn’t like it much. And I don’t really blame him. If it’s not made right, it’s just not worth it. Flavorless, mushy, and spongy are certainly not words used to describe the tastiest food, but they are often used when talking about tofu. How sad, when tofu can be just the opposite!


 Ben has recently gone through some tofu transitions. As I said, he used to dislike it. Then he eventually turned into an obliging tofu eater – he’d eat it if it was being served, without complaint, but also without any enthusiasm. But lately, as I’ve been experimenting with different versions of baked tofu for my own lunches, I think he’s actually gotten more curious – intrigued, or jealous, perhaps? And then one night, he saw these crispy baked tofu nuggets get pulled from the oven. And the tofu cheers began ringing. He hadn’t even tasted them yet, but had never been more excited about eating tofu for dinner.

Fortunately, once we got to eating, there was no disappointment. The crunchy coating crisped up perfectly in the oven, and the tofu had just the right amount of bite – not mushy, and not overdone either. As we noshed on these nuggets, dipping them into a sweet and spicy sauce (just some jarred mango salsa kicked up with a touch of honey, lime juice, and soy sauce) he even declared it “total comfort food.”

For anyone thinking, “can you send your husband to talk to mine about tofu, man-to-man?” Well, I would, because tofu is healthy, and cheap, and tasty, and therefore deserves a place in your home. But I suggest you give it one more shot and try this recipe. Hopefully your man (or yourself!) can become a tofu lover too.

Crispy Coconut Tofu Nuggets
Printable Recipe
1 block firm tofu
1/4 cup liquid egg substitute (or 2 egg whites)
1/2 cup (30gm) panko breadcrumbs
1/4 cup shredded coconut
zest from one lime

Wrap the tofu in paper towels and place it under a plate, weighted down with a couple cans or jars. Let sit for 20-30 minutes.

Preheat oven 375F. Set a cooking rack on top of a baking sheet, and spray with nonstick cooking spray.

Pour the egg substitute or egg whites in a shallow dish. Mix together the panko, coconut, and lime zest and pour onto a plate.

Slice the tofu crosswise into 6 slabs, and then cut each rectangle diagonally into two triangles. Season the tofu wedges with salt and pepper. Dip each one into the egg, then dredge in the panko mixture and set on the cooling rack.

Bake for about 25-30 minutes, turning halfway through, until lightly browned and crispy on both sides.

    I think if I were to ever get my husband to eat tofu, coating it in crispy coconut would be the way to go! I've been trying to get him to eat more vegetables. I recently tried roasted cauliflower and he loved it! Next is broccoli πŸ™‚

    Nice work, Cara! I recently got my husband to like tofu as well. I was so surprised! I coated my firm tofu pieces with flax meal, TJ's peanut satay sauce and a whole boatload of spices and then baked until slightly crisp. He said it tasted like Wendy's chicken nuggets. I'm so glad your husband liked your recipe. I like how you added coconut to your coating. The sweetening definitely does help. And that sauce of yours sounds perfect! I am want my husband to try Kombucha. But the smell of it makes him gag (with good reason)!

I am making baby steps though because I recently stocked the fridge with some flavored Greek yogurt vs. my usual plain Fage, and he took one to work today. Cross your fingers that he likes it!

    My husband loves tofu now too. The orange glazed tofu from 101 cookbooks was the recipe that turned it around for him. Then I made tofu steaks with roasted red pepper sauce. He said he could eat it every day πŸ™‚ I love when that happens!

    I turned my husband onto tofu with a "tofu meatball" recipe handed down from my mom… he says that as long as I tell him beforehand that the meal is made with tofu, he'll be fine ;). This recipe sounds fantastic! I love coconut, and the tofu triangles look wonderfully crispy. Will definitely have to try these.

    Julie, I think you would need to fry the tofu in a good amount of oil to get it crispy (and I try not to do much frying in general, so I don't really have any further advice, sorry!)

    These sound great. My daughter, husband and I love tofu. My other daughter – not so much.I have the hardest time getting my children to eat a lot of things. Mostly vegetables.

    HI,my husband is totally fine with tofu and tempeh (despite growing up in Ireland), I was going to make sesame crunch tofu for dinner, but this sounds so good, I'm making it instead. Maybe more than one of my kids will eat it. . .

    I would love it if mine would even try tofu or tempeh! For some reason he has this idea of what they will both taste like. I am making baby steps though because I recently stocked the fridge with some flavored Greek yogurt vs. my usual plain Fage, and he took one to work today. Cross your fingers that he likes it!

    These little nuggets of joy look awesome! I don't think Z really likes tofu, but he will be OK with eating it because it is cheap. But if I could do this to make it awesome — tofu allll day! Great recipe πŸ™‚ I can't wait to try it!

    I turned my husband onto tofu with a "tofu meatball" recipe handed down from my mom… he says that as long as I tell him beforehand that the meal is made with tofu, he'll be fine ;). This recipe sounds fantastic! I love coconut, and the tofu triangles look wonderfully crispy. Will definitely have to try these.

    These look great and I love that your husband is eating tofu! I wish mine would… I make tofu when he's out of town or when I'm making shrimp for him (something I don't eat). He tasted it once and won't do it again. Good job transforming your husband!

    My husband loves tofu now too. The orange glazed tofu from 101 cookbooks was the recipe that turned it around for him. Then I made tofu steaks with roasted red pepper sauce. He said he could eat it every day πŸ™‚ I love when that happens!

    Nice work, Cara! I recently got my husband to like tofu as well. I was so surprised! I coated my firm tofu pieces with flax meal, TJ's peanut satay sauce and a whole boatload of spices and then baked until slightly crisp. He said it tasted like Wendy's chicken nuggets. I'm so glad your husband liked your recipe. I like how you added coconut to your coating. The sweetening definitely does help. And that sauce of yours sounds perfect! I am want my husband to try Kombucha. But the smell of it makes him gag (with good reason)!

      Hi Angela, when I came up with this recipe, I don’t think I knew yet about unsweetened coconut! So I had used sweetened. But I think it would be worth a shot with unsweetened too.
