Black Bean Tortilla Casserole

No joke. This is the third time I’ve blogged about this recipe. I won’t say too much as you know my shpiel – it’s healthy, delicious, husband-approved. But I just had to share it once more, since I get the sense I have some newer readers and I really don’t want you to miss it. I first started making this Black Bean Tortilla Casserole almost three years ago, and it’s one of few dishes I’ll make again and again. But, my photo skills were still in their baby stages back then (not that they’re higher than toddler stage now), plus, how hard is it to take non-ugly pictures of casseroles? Really, really hard.     Yum it looks like nachos in a casserole. That is so funny about taking non-ugly photos of casseroles. I agree, it is so hard and I feel like they all come out looking the same (at least on mine).

    I agree. Casseroles are so challenging to photograph. Visually they are rarely stunning and hard to plate. I always debate whether they look better in the casserole dish itself or plated.
