High Fiber / High Protein Pumpkin Pancakes |
As I was getting my lightbox set up to photograph this meal, my darling husband had the nerve to say, “Why are you blogging pancakes?” I asked, “Why not?” He answered that “pancakes aren’t really that special and they won’t really photograph that well.” Readers, I beg to differ. These are my special high protein / high fiber pumpkin pancakes and I hope that someone out there is happy to read about them!
This is a recipe I made up a few months ago when I started my heavy weightlifting routine. To some of you, the ingredients may look funny. But if protein powder is already a staple in your household, I urge you to give these a try. They really do satisfy my craving for the real thing! And just look at the size of that stack – tell me, could Bisquick give you that many pancakes for just 284 calories? Definitely not. But even better, these are loaded with fiber and protein so from a hunger standpoint, there are even more satisfying than the real thing. I love making these mid-morning on a weekend to get me through the day. This time, we had them for dinner along with some apple chicken sausage.
High Fiber / High Protein Pumpkin Pancakes
1/2 cup egg substitute
1/4 cup Fiber One Cereal
1 scoop vanilla protein powder
2 tbsp pancake mix
2 tbsp pumpkin puree
dash of cinnamon

Calories: 283.4
Total Fat: 1.5 g
Cholesterol: 30.0 mg
Sodium: 425.3 mg
Total Carbs: 34.5 g
Dietary Fiber: 8.5 g
Protein: 39.1 g
