Lavash Pizza

Pumpkin. Goat Cheese. Chocolate. Low-Carb Lavash. Yup, I might have just added another delight to my list of favorite foods. These soft flat breads, made by Joseph’s Middle East Bakery, are a staple in our household. They are the best low-carb, low-calorie bread or tortilla option I have been able to find yet. Only 100 calories, I use these for my lunches just about every single day. Tonight I was cooking just for myself, and wanted something quick and light – I decided to use a low-carb lavash to make a grilled flatbread pizza. I simply sprayed both sides of the wrap with olive oil spray, placed it on the grill over low heat, and cooked for a couple minutes on each side. I then transferred it to a baking sheet, added my favorite toppings (diced tomatoes, sliced chicken sausage, roasted peppers, artichokes, Penzey’s pizza seasoning, feta and cottage cheese, a bit of pecorino romano and crushed red pepper) and baked it in the oven for about 10 minutes to heat through. This was satisfying, delicious, easy, and best of all, healthy.
