Grilled Tomato and Corn Salad

Mmm. Fresh corn, tomatoes, basil, and the sweet, savory smokiness delivered by the grill? Tastes like summer to me! For this easy and delicious salad, I combined grilled corn on the cob with charred grape tomatoes and sweet fresh basil. The flavors are simple but come together for a delicious summer treat.

1 ear of corn, silks and husks removed
about 1 cup of grape tomatoes, halved
6-8 leaves of fresh basil, sliced thinly into strips
olive oil, salt and pepper

Spray the corn with olive oil spray, wrap in foil, and grill over high heat for about 15 minutes, turning occasionally. Place the tomatoes in a grill basket, spray with olive oil spray, and grill for no more than 5 minutes, until the skins are charred and they begin to pucker. When the corn is done, let it cool for a few minutes, and while holding with a kitchen towel, cut the corn from the cob. Combine the kernels in a bowl with the basil and tomatoes, drizzle with olive oil, season with salt and pepper to taste, and toss to combine.

    This is not only colorful but so simple (which is always better in the summer!). I make my corn salad very much the same way!
