Tangerine Chicken & Moroccan Carrot Salad

I have to admit – since we moved into the new house a little over a week ago, we’ve used the outdoor grill twice, and in indoor grill four times. I guess twice more is not that big of a difference, but I feel like I’ve been using it all the time! Two times was because it was drizzly outside, and last night because we ran out of gas for the outdoor grill. I absolutely adore having this option inside – I was skeptical, but it really works beautifully and cooks just as well, if not better than outdoors! It’s also quite nice to have side-by-side access with the burners and the rest of the kitchen, so we can tend to grilling and other things at the same time.

Last night I used my new favorite appliance to make Tangerine, Honey, and Chipotle glazed chicken, because I had some leftover fresh tangerine juice my friend Vanessa had brought over. It was great – tender, sweet, and spicy. Cooking over low heat for a longer period of time ensures that all the meat is cooked evenly and retains its moisture, without letting the outside burn. I served this with one of favorite side dishes, Moroccan Carrot Salad. Just a warning, the fresh garlic and parsley produce a really strong flavor, but we love it. You can use a bit less if you like! But it’s a great side dish to throw together in a pinch for something different.

Chicken with Tangerine, Honey, and Chipotle Glaze

Glaze
2 cups fresh tangerine juice
5 tablespoons honey
1/4 cup soy sauce
2 tablespoons finely grated tangerine peel or orange peel
2 teaspoons minced canned chipotle chiles in adobo sauce

Chicken
1 cup fresh tangerine juice or orange juice
1/3 cup chopped fresh parsley
1/3 cup chopped fresh cilantro
3 tablespoons chopped fresh thyme (I omitted, the grocery store was all out)
3 tablespoons minced peeled fresh ginger
3 tablespoons unseasoned rice vinegar
2 tablespoons olive oil
2 tablespoons finely grated tangerine peel or orange peel
1 teaspoon coarse kosher salt
1 2 3/4- to 3-pound chicken, quartered, backbone removed (I used split chicken breast, and removed the skin prior to marinating)
Nonstick vegetable oil spray

For glaze: Boil juice, honey, and soy sauce in heavy medium saucepan until reduced to 2/3 cup, about 20 minutes. Mix in grated peel and chipotle chiles.

For chicken: Whisk first 9 ingredients in 13x9x2-inch glass baking dish to blend. Add chicken; turn to coat with marinade. Cover; chill at least 2 hours and up to 1 day, turning occasionally.
Spray grill rack with nonstick spray and prepare barbecue (medium-low heat). Remove chicken from marinade; discard marinade. Sprinkle chicken lightly with salt. Grill chicken until cooked through, turning and repositioning occasionally for even cooking, about 20 minutes. Brush chicken all over with glaze; grill 2 minutes longer on each side. Transfer chicken to platter. Serve, passing remaining glaze separately.
Moroccan Carrot Salad
Adapted from The Jewish Traditions Cookbook by Marlena Spieler


5 medium carrots, peeled and thinly sliced (the slicing attachment on your food processor is great for this)
4 cloves of garlic, minced (or less if you don’t like a strong garlic taste)
1-2tbsp red wine vinegar
juice from 1/2 a lemon
generous pinch of cumin
drizzle of olive oil
handful of chopped fresh parsley
salt & pepper

Cook the carrots in boiling water for about 3-4 minutes, drain and rinse with cool water. Whisk together remaining ingredients and combine with carrots. Serve at room temperature or chilled.
