Surprise! I cooked with Pumpkin!

Alright – I know that this mixture of smushed up pumpkin and black beans is far from pretty, but I promise you it’s quite tasty. This is a little spin I put together on one of my favorite dishes, the Sweet Potato and Black Bean Burritos from the Moosewood collection. It came to me like an epiphany: why had I never thought to use pumpkin in place of sweet potatoes before? I love pumpkin. It’s healthier (well, much less calories). And easier – no peeling and cutting up and cooking of potatoes. The soon-to-be-hubby loved it just as much with pumpkin, and because this version is so low-calorie and just as filling, I think it’s around to stay. I made enough filling for three large burritos – one for each of us for dinner, and one for lunch for me!

Pumpkin and Black Bean Burritos
1 medium onion, chopped
2 cloves of garlic, minced
2 tbsp canned green chiles
2 tsp cumin
1/2 tsp salt
1 can black beans, drained and rinsed
1 cup pumpkin puree
Handful of fresh cilantro
juice from 1/2 of a lime
2 tsp hot sauce
3 large tortillas

Preheat oven to 350F. In a skillet coated with cooking spray, saute onions, garlic, and chiles over medium heat until onions are soft. Add cumin and salt, cook for another minute or two, and remove from heat. Combine with remaining ingredients, except tortillas, in food processor and pulse to combine. Place 1 cup of filling on each tortilla and roll up and place in a baking dish coated with cooking spray, seam side down. Bake for about 15-20 minutes, or until heated through. Serve with salsa and sour cream if desired.

Nutritional information for 1 cup of the filling (add your tortilla information from the package to determine complete meal): 166 calories, 1.5 grams fat, 35 grams carbohydrate, 11 grams fiber, 10 grams protein.

    I am all for healthy burritos and yours looks great! I have made mine with black beans and most of the other goodies you listed except for the pumpkin. I have a hard time thinking how it will taste with the pumpkin. A must try!

    Sweet potato and black bean burritos are good and pumpkin sounds like it would make a really nice as well. I still haven’t seen any pumpkins at the farmers market and my list of pumpkin dishes to try is getting bigger.
