Round 2: Simply Delicious! Thanks to all who took part!
Lindsay from TeamRichey sale “olé!” with a Mexican fiesta! The ingredients lended themselves well, so why not? A classic chicken tortilla soup with corn and jalepenos garnished with gooey cheese was followed by an incredible dessert enchilada with a creamy lemon and blueberry filling. Now, where’s my margarita?!
Sarah from Chomping the Big Apple continued the Latin theme with one of the best meals she has ever made – Blueberry-Chipotle Enchiladas and Orange Spice Cheesecake Rolls. She really takes “sugar and spice” to the next level by combining the sweet blueberries with the spicey peppers, and there is even a dash of chili powder in her dessert! I would love a bite of that
Elly does not usually like fruit in her savory dishes, but this time she was determined to use all the ingredients in one dish. She made something so incredible, it’s beyond words. Seriously. I mean it doesn’t have a name. She also drew upon Latin influence, basing her dish on an entree she once enjoyed in a Cuban restaurant. It consisted of an authentic, homemade corn tortilla, topped with a warm tomato-spinach salad and crumbled queso fresco. Sitting atop it all was a blueberry-chipotle BBQ chicken so tasty, I think she might even start using fruit on a regular basis! (well maybe not, but at last she is open to the idea )
Stefany loves the idea of the Platinum Chef Challenge so much, she decided it was time to create a blog of her own. She’s now ready to have us over for cocktails and h’or doerves with her blueberry martinis and sweet & spicy Mexican wontons.
Amber joined in for the first time with some seriously delectable delights. I like how she posted her dessert first. After all, life is short, right?! She made a delicious looking banana roll cake with a blueberry lemon filling (and I will admit, the idea of making a roll still intimidates me, so props to her!) and a black bean and corn dip. Yum!
Gillian cooked up a whole slew of goodies this round, with two healthy vegetarian options and two delicious desserts! Looks like we can have our choice of Triple C (corn, chili, cheddar) pizza or Black Bean and Corn Quesadillas, Followed by Blueberry Lemon Cobbler or Lemon-Blueberry Meringue Pie. Sounds like a delicious feast!
Brooke is treating us to both breakfast and lunch! For all of you blueberry-lemon combo lovers, she is serving up citrus waffles with blueberry syrup. And when you are hungry again, try a slice of BBQ style pizza topped with bbq sauce, corn, smoked turkey, hot peppers, two kinds of cheese, and my favorite, cilantro! Sounds delicious!
Finally, my own entries. I made a blueberry-infused balsamic vinegar to create a salad dressing, and grilled mahi with roasted corn and pecan polenta with a blood orange and avocado salsa. I don’t think I was quite aware of how yummy mahi is, and now that I know I can’t wait to make it again!
