Smokey Goat Cheese and Turkey Penne

Poor pasta. Well, poor ME I should say since I don’t get to enjoy it that often (you know, trying to be healthy and all). So you know that when it does make an appearance in my kitchen, you aren’t going to see any plain ol’ spaghetti and meatball! (not that I don’t appreciate a good meatball, but pasta can be so much more!) Tonight’s dinner was inspired by the Westfield Farms Hickory Smoked Goat Cheese I bought last weekend. It has a great, rich taste, almost like a mixture of smoked Gouda and plain chevre. So if you wanted to make a dish similar to what I made here, I would recommend using a combination of those cheeses. Also, I am very proud to be making my first submission to Ruth’s Presto Pasta Nights at Once Upon a Feast. This was a great dish, full of flavor, and very much appreciated in our home, where pasta is considered a treat.
Smokey Goat Cheese and Turkey Penne

6 oz whole wheat penne, uncooked
small package cremini mushrooms, washed and sliced
1/2 of a small red onion, sliced thinly
2 cloves garlic, minced
10 pieces sundried tomatoes, reconstituted, then sliced
8 oz leftover roasted turkey, chopped
salt & pepper
1/2 cup evaporated milk
2 oz hickory smoked goat cheese
a few sprigs of fresh rosemary and sage, chopped
2 tbsp grated pecorino romano

Cook pasta according to directions on box. Meanwhile, spray a skillet with evoo and cook mushrooms, onions, and garlic until soft, about 10 minutes. Add sundried tomatoes and turkey, season with salt and pepper, and heat through.

When pasta is al dente, drain, return to pot, and lower heat to warm. Pour evaporated milk over pasta, stirring to coat. Crumble goat cheese into the pot and stir to melt and coat pasta. Toss in fresh herbs and stir to combine, then add mushroom mixture, tossing together to combine. Divide evenly among two bowls and sprinkle pecorino romano on each. Enjoy!

    It certainly does look delicious. Thanks for joining in Presto Pasta NIght fun.We’re on South Beach Diet and with all the interesting pastas out there, we actually get to eat it at least once a week.I’m looking forward to your next batch of pasta.

    This reminds me of a smoked chicken pasta dish on the menu at our local pub. Why oh why did they ever take it off the menu??????
