Cinnamon, Blueberries, and Chocolate! |
I decided to enter the Weekend Breakfast Blogging Event #12: Spice it Up!, hosted this time by The Spice Who Loved Me. This breakfast was nothing too complicated, but I did use a lot of cinnamon, so I figured, why not? Cinnamon is always great in breakfast, and pairs well anytime with blueberries, and especially with chocolate, This breakfast also showcased fresh blueberries and my new chocolate goat cheese.
I hadn’t used my waffle maker in quite a bit of time because I have yet to find a recipe that isn’t loaded with oil or butter, so I cheated once again and used whole grain baking mixing mixed with vanilla yogurt and a beaten egg. And of course, a healthy shake of cinnamon!
I crumbled some fresh chocolate goat cheese on the waffles, sprinkled with blueberries, dusted with confectioners’ sugar and more cinnamon. Simple and delicious!

Also – we make waffles all the time, the Whole Foods 365 brand waffle/pancake mix is actually really really good. Last weekend i added chopped frozen peaches to the mix and made a peach syrup…mmmm…
