Black Bean Patties, Revisited

I’ve made these twice now, so I guess you could say they’re “in the rotation”! Tonight I did something a little different than last time. I made 8 small patties instead of four, and served them with a big ol’ salad with field greens, tomatoes, cucumbers, green onion, red peppers, mangos, and a little shredded mexican blend cheese. For dressing, I mixed together TJ’s lowfat creamy cilantro dressing with some fresh squeezed lime juice. The only thing I might have been missing is some guacamole, that would be great with this! And ps, my dear fiance announced, “you know, I really don’t miss having meat in every meal!” Bless him 🙂
