A Sexy Little Love Triangle

Cheese loves Fruit. Fruit, especially dried fruit, loves Nuts love Cheese. They all love Chocolate! Shoot, this might be a foursome! The first three are this month’s topic for hosted by the .

My inspiration came from chocolate goat cheese I bought last weekend. Some people might wonder, “What the heck does one do with chocolate goat cheese?” Well, eat it with fruit and nuts, of course! I decided to make chocolate-goat-cheese-cherry-almond-truffles. If you can think of a cuter, shorter name, let me know! Maybe I should just call them sexy little foursomes? They are pretty sexy. And more importantly, pretty darn delicious!

So, if you are lucky enough to come across some delicious chocolate goat cheese, here’s how you can make a sexy little foursome truffle.

3oz chocolate goat cheese, room temperature
2 tbsp confectioners’ sugar
1/4 cup dried cherries, chopped
1/4 cup almonds, crushed

Stir together goat cheese and confectioners’ sugar, and mix in cherries. Drop by rounded teaspoon-fulls (I used a small cookie scoop) onto wax paper lined plate. Place in freezer for about 15 minutes to firm up. Remove from freezer and roll truffles in crushed almonds. Enjoy immediately, or refrigerate until ready to serve.

    we are lucky enough to have Westfield Farms goat cheese company not too far away, and they make several kinds of specialty goat cheese! you can order online as well.
