Tuesday nights are usually difficult for me because I do double classes at the gym and don’t get home until close to 8pm. I usually do a crockpot meal, or something really simple that my FI can get going. Tonight I planned for us to have a Jenny-O marinted turkey tenderloin, broccoli, and corn on the cob. I really like having some Jenny-O turkey in the freezer. They come in several great flavors, and are very healthy. A package at BJ’s comes with two large tenderloins, 4 servings each. We split it into two freezer bags and then share one for a meal. Each serving is 120 calories. Tonight it was raspberry chipotle, and FI cut it into “turkey tips” and cooked on the grill. Now, on to the corn. I have to say, I have never been a big fan and I actually try to avoid it because I thought it was pretty caloric, like other starchy sides. However I learned from sparkpeople that a large ear of corn has only 125 calories, less than a serving of rice or potatoes that I would typically eat (though I try to avoid too much of that stuff as well!) FI used butter-flavor cooking spray and Penzey’s southwest seasoning on the corn, wrapped it in foil, and grilled that as well. Finally, the broccoli. We decided to try something new and cook the broccoli in our grill basket (why turn on the oven when everything else was on the grill?) I was a little nervous having never tried this before, but then I reminded myself that I normally grill all the other veggies which I would typically roast in the oven so this should not be any different. FI used some evoo spray and salt and pepper, and it grilled up deliciously. Thumbs up for my handsome hottie sous chef!
