A coleslaw we actually like! |
Tonight we had, for the second time, CL Spicy Honey Chicken – however I subbed breasts for thighs and balsamic vinegar for cider. We cooked them on the grill with some corn on the cob. Now, I could have sworn that I bought green beans to go with this meal, but apparantly those did not make it into my basket at the market. I needed another side, what to do?! Well, I still had the bag of shredded cabbage leftover from the fish tacos. We are not big on traditional-style coleslaw, and it’s never something I make (well except for this one Asian-style coleslaw I make for BBQ’s. But again, that’s not traditional). So I had figured the cabbage would be thrown out at the end of the week. But I did a quick search on CL and came up with their Peanutty Cabbage-Apple Slaw with Raisins. That sounded way more “us”. I didn’t have any peanut oil, so I used some peanut butter. And I didn’t have white balsamic vinegar, so I used regular brown. But it was really tasty, and my fiance said he definitely would not mind me making it again. For enough dressing for two servings, I used:
3 tbsp balsamic
