I bought this grill basket last season, and I have to say, I absolutely adore it. There is something so tantalizing about a platter of colorful vegetables, fresh off the grill, with that charred, almost carmelized taste. I’ve been thinking lately about how to get better about bringing lunches to work. Truthfully, I am pretty bad at it, unless we happen to have leftovers of something healthy. I decided to take advantage of the nice weather and grill up a bounty of veggies – eggplant, zucchini, summer squash, red onions, red peppers, and even some garlic cloves. I gave the veggies a healthy spray of evoo, and tossed with balsamic vinegar, salt and pepper. I let the marinate ofr about 30 minutes before throwing on the grill. I also picked up some low-carb, whole wheat wraps, hummus, baby spinach, and fresh basil. Now I can’t wait to bring my lunch this week!
