I never thought we’d make it! Just kidding. I really don’t think Passover is as bad as most people make it out to be. As you can hopefully see, I made some pretty tasty stuff throughout. To finish it off, I turned to the freezer. A few weeks ago I had bought some of TJ’s punjab spinach simmer sauce. I cooked 1lb of ground turkey, a cut up eggplant, the jar of sauce, and some water as directed on the jar. At that time we served it with whole wheat penne. This time, I used spaghetti squash. I also had regretted diluting the sauce with water, so I added a small can of tomato sauce, some frozen spinach, and lots of extra curry powder and cayenne. Another big approval from Benny!
