Passover Pancakes |
Always a tradition in my mom’s kitchen, however I had to google a recipe because she
wasn’t home when I called. I tweaked it a little, and here’s my version:
2 eggs, seperated
1/2 cup matzoh cake meal
1/2 cup water
1/2 tsp salt
1/2 cup applesauce
dash of vanilla
dash of cinnamon
Beat egg yolks till creamy and light yellow. Stir in matzoh meal, applesauce, and water. Beat egg whites and salt till stiff peaks form, and fold into egg yolk mixture. Mix in vanilla and cinnamon. Cook on a nonstick griddle coated with pan spray over low heat, as you would regular pancakes. I served with some of the blackberry sauce I had made to go with the chocolate torte.
