More with Moroccan |
Sorry the picture is not so great – I need to work on my photography skills! On Sunday, my Jewish family had nothing to do so I invited them over to finish up my leftover from Saturday night. Might sound tacky, but they will eat any matzoh ball soup and kugel put in front of them! I also made another dish – Moroccan Lamb and Eggplant Matzoh Pie with Spicy Tomato Sauce. If you like Moroccan flavors, there’s no reason not to love this dish. I used 1lb of lamb and 1 lb of turkey and added some extra seasonings. It was so good that I would make it year round, using lasagna noodles or pasta sheets instead of matzoh! My only mistake was forgetting to peel the eggplant, I think that would have made it a little better. And using a knife to cut it. And spreading a little sauce on the bottom of the pan, as you would with lasagna. The recipe just called for matzoh as the bottom layer, and in my case, it stuck. I roasted some asparagus to go with it too.
